Blueberry Jam with Chia Seeds

Blueberry Chia Seed Jam

Ingredients:

  • 550g (size of a frozen bag of fruit) frozen blueberries ( or about 4 cups +

    2 tablespoons fresh or frozen)

  • 1/4 cup pure maple syrup, or to taste
  • 3 tablespoons chia seeds
  • 1 teaspoon fresh lemon juice or more to taste

Directions:

  1. In a medium pot, stir together the blueberries and maple syrup until combined. Simmer over medium high heat, uncovered, for about 8 – 10 minutes until softened. The berries will release a lot of water during this time.
  2. Add the chia seeds and stir until combined. Continue simmering and stirring frequently about 8 minutes longer (usually less), until most of the water cooks off and the jam reduces in volume. It will look thickened.
  3. Remove from heat and stir in the lemon juice. Let cool and put in a jar or other container. I put this in cottage cheese or yogurt or on overnight oats. I find it keeps well for a week or a little longer in

    the fridge.
